For the Dough: 200 grams whole wheat flour 10 grams fresh yeast 3/4 teaspoon salt 3/4 teaspoon sugar 1 teaspoon oil for the sauce 400 grams tomatoes 2 small onions, chopped 3 to 4 cloves crushed garlic 1/2 teaspoon chilli powder 1 teaspoon sugar 1/2 teaspoon oregano or a pinch of ajwain 1 teaspoon oil salt to taste Tor the Topping: 2 capsicums, cut into rings 4 onions, cut into rings 2 tomatoes, cut into slices 50 grams grated paneer or 75 grams mozzarella cheese
Sieve the flour with the salt and sugar. Add the oil and mix well. Make a well in the centre and crumble the yeast in the centre. Sprinkle 1/2 teacup of warm water over the yeast. Wait for a few minutes. Mix the yeast in the flour and add enough waterto make a dough. Cover the dough with a wet cloth to "prove". Leave for 30 minutes or until it is double in size. Knead the dough for 1 minute. Divide the dough into 16 parts. Roll out each part to 75 to 100mm. Diameter rounds. Prick lightly with a fork.Brush a baking tray lightly with oil and arrange the rounds on the tray. Keep aside for 15 minutes. Bake in a hot oven at 200c for 15 minutes." Chop the tomatoes and drain. Heat the oil, add the onions and garlic and fry for 3 minutes. Add the tomatoes,chilli powder, sugar and salt and boil for 10 minutes. Blend the mixture in a liquidiser. Add the oregano. When you want to serve, spread some sauce on top of each pizza. Arrange the capsicum and onion rings and tomato slices on top. Sprinkle the paneeron top. If you like, use a mixture of paneer and cream. Bake in a hot oven at 200c for 5 to 10 minutes.
